For today's recipe, I have decided to post:
CHICKEN COBBLER WITH CORNMEAL TOPPING
ingredients:
2 potatoes, cubed
3 carrots, sliced
1 onion, finely chopped
1 rib of celery, finely chopped
3 TBSP butter
2.5 ounces canned chicken
1-1/4 cans chicken broth
3 TBSP flour
1-1/4 cup milk
salt and pepper
1/2 tsp dried thyme
1/2 cup frozen peas
1/4 cup chopped pimento
1 TBSP chopped parsley
8 oz. corn muffin mix
1 egg
Cook potatoes and carrots until tender. Drain.
Saute celery and onion in small saucepan, with butter, until tender.
Gradually stir flour into onion mixture. Cook 1 minute.
Add broth and 1 cup milk (gradually) stirring constantly.
Add salt and thyme.
Bring to boil. Stir frequently until thick.
Remove from heat.
Stir in peas, pimento, parsley, potatoes, carrots and chicken (drained.)
Put into a 1-1/2 quart baking dish.
Combine muffin mix, pepper, 1 egg and 1/4 cup milk until moist.
Drop on chicken mixture.
Bake at 425 for 20-30 minutes. (Until breading is done and golden, and inside is bubbly.)
