PECAN PIE BARS
These are so yummy and pretty easy....and did I mention they were yummy?
Ingredients:
Crust:
2 cups all-purpose flour
1/3 cup sugar
1/4 teaspoon salt
3/4 cup cold butter
Filling:
4 eggs, lightly beaten
1-1/2 cups corn syrup
1-1/2 cups sugar
3 tablespoons butter, melted
1-1/2 teaspoons vanilla extract
2-1/2 cups chopped pecans
In a large bowl, combine the flour, sugar and salt. Cut in butter until the mixture resembles coarse crumbs. Press firmly and evenly into a greased 15-in x 10-in x 1 in baking pan. Bake at 350 for 20 minutes.
For filling, combine the eggs, corn syrup, sugar, butter and vanilla in a bowl. stir in pecans. spread evenly over hot crust. Bake 25-30 minutes longer or until set. Cool on a wire rack. Cut into squares.
Obviously, once they were done, I dipped half in chocolate.....just to cut the sweet ;)
Also, I DIDN'T do this before, but I will next time I make it. I will probably line the pan with parchment and have it hang out enough to lift the bars out and cut a little more neatly.
